2. Industry:
Fast moving consumer goods (FMCG) is the 4th largest sector in the Indian economy. There
are three main segments in the sector – food and beverages which accounts for 19 per cent of
the sector, healthcare which accounts for 31 per cent and household and personal care which
accounts for the remaining 50 per cent.
The FMCG sector has grown from US$ 31.6 billion in 2011 to US$ 49 billion in 2016. The
sector is further expected to grow at a Compound Annual Growth Rate (CAGR) of 20.6 per
cent to reach US$ 103.7 billion by 2020.
FMCG Companies are looking to invest in energy efficient plants to benefit the society and
lower costs in the long term.
Food industry is a subsidiary part of FMCG sector. Indian Biscuits Industry seems to be the
largest among all the food industries and has a turnover of over 3000 crores. Indian
subcontinent is known to be the second largest manufacturer of biscuits, the first being USA.
Today the total production of biscuits in India is estimated to be around 30 lakh MT. Biscuit
Industry is estimated to grow over 15%-17% in next few years. Biscuit Industry contributes
Rs. 8,000 crores to the FMCG industry today, provides vast opportunity of growth.

In terms of the type of biscuits, the market has been pre-dominantly characterized by the
glucose and digestive biscuits. However, in recent times this segment has seen its share fall
from 80% to 70% of the overall market. In contrast, the smaller indulgence segment
consisting of cream, chocolate biscuits and cookies is picking up momentum. This has been
backed by rising disposable income and growth in modern retail format.

3. Company:
Anmol biscuit manufacturing unit was established at Dankuni, West Bengal in December,
and 1994.In the year 1998, the company had successfully commissioned its second
manufacturing unit at Dankuni, adjacent to the existing unit.
Keeping the momentum of growth, Anmol geographically moved to North & North West
India by setting up a new manufacturing unit in Greater Noida, UP in 2001.
In 2004, the company acquired a biscuit manufacturing unit at Panchghora, West Bengal.
The Group began with the production of cakes in the year 2004-05.
Seeing the huge prospects and growth in the biscuits industry, the company, in the year
2011, set up yet another state-of-the-art manufacturing unit in Hajipur, Bihar.
The company had begun its production with mere two varieties but as of today, it is
manufacturing more than thirty varieties.
Anmol has a total installed capacity of 263000 MTPA today, spread across eastern and
northern India. Production facilities are located at Dankuni-West Bengal, Greater Noida-
U.P., Ghaziabad-U.P., Hajipur-Bihar and Job Work Units are located at Sambalpur &
Kendrapara-Odisha. Through the years, company transit from a traditional manufacturing
facility to multiple state-of-the-art modern manufacturing facility.

4. Location of the Factory:
We have visited the Dankuni plant of biscuits and cookies of Anmol. The factory is situated
at Maity Para in Hooghly. The Factory is situated in a semi urban area of Dankuni with well
transport facilities and its total build area is divided into an entrance, manufacturing area,
processing area, storage area, parking, canteen, auditorium, grass fields and garden
associated with pools and ducks for employee’s refreshments.

5. Objectives of visit:
To get a practical orientation of the production structure and production process of
different varieties of Anmol biscuits and cookies.
To recognize the process unit and identify the input and outputs of different processes for
making of Anmol biscuits.
In order to know about proper management and handling of different processes and other
further activities in concern with the production process of Anmol Biscuits.

7. Anmol Industry divides its products into two major categories i.e. cakes and biscuits. These
two are again further divided into different sub types.
Now the individual category details of Anmol products are shown as follows.
Glucose Sweet Biscuits: Anmol prepares a whole range of sweet biscuits. This biscuits are
small and rectangular or round shaped flat- baked biscuits.
Healthy Biscuits: These are sweet biscuits with special digestive fibres, nutrition and some
are made up with sugar free ingredients. Marie is one of the types of health biscuits category
of Anmol.
Cream Biscuits: Anmol prepares different flavour of cream biscuits. This is the type where
two sweet cookies attached by a layer of cream served as one piece. Nine different types of
flavour in this category are produced by Anmol.
Crackers: The crisp wafer or biscuit usually made off unsweetened dough.
Bar Cakes: It is a rectangular bar of cake, usually sliced, made up with different fruits, milk
or vanilla flavours.
Tiffin Cake: It is a piece of cake usually small in terms of quantity of bar cake. The
ingredients are more or less same as used in production of bar cakes.
Sandwich Cakes: These are the types where two major flavours orange and choco cakes are
prepare with a creamy or jelly fill inside
The Dankuni factory of Anmol mainly produces biscuits and cookies. The next part of the
study is all about the different processes of production of Anmol biscuits and cakes.
8. Details of Manufacturing Process:
Prime Equipments or machines used in production process: The total production process
consists of different fully automated, semi automatic and manual machines. The quality
control unit has different updated technologies to maintain high quality in products. Grinder
and mixture, Dough maker, fully automated processing machines, sandwich machines, metal
detectors and ovens are some names of important machines used in the production process.
These machines are heavy and some of them create huge heat so different cooling systems
are installed to control the temperature issues in production.
Process Division: The total production factory is divided into eleven departments. Eight
departments are dedicated to produce biscuits. Two of the departments produce cakes and
one department is there for production of cookies.
Raw Materials: Various raw materials are needed to produce different types of varieties of
Anmol. The main raw material that is used as the basic matter is flour. Beside that different
fruits, edible colours, edible flavours, milk, sugar, butter, baking soda etc are needed for food
production. Now for the packaging Anmol uses their printed wrappers and boxes. For the
fuel of the ovens the company uses Furnace oil or LPG.
Production Process: Anmol divides its production process into nine following steps,
Material Analysis: Firstly, the company check, test and verify all the raw materials and
packaging materials. Some instrumental analysis can be done as prescribed in the quality
manual. Finally, the company approves material handover to supply chain for unloading.

9. Premixing Process: In the Premixing stage, the raw materials are tested on random basis.
The calibration of liquid wheat flour happens in this stage. The sugar solution is tested and
sponge inspections are done in this process.
Mixing and Dough Formation: Dough is a mixture of flour and different fluids for baking
into cakes or biscuits. Different mixer machines and grinders are there in the factory for
dough formation. According to the different product types the dough is mixed up with
different flavours and other elements.
Manufacturing: In this stage a sheet of dough is formed and that further goes for
laminations of those sheets. The cutting in shapes is done in the assembly line of the process.

10. Baking: Five chambers are installed in the baking section. Variety needs more temperature
variations.
Temperature of the 1st chamber - 150 C
Temperature of the 2nd chamber - 200 C
Temperature of the 3rd chamber - 250 to 300 C
Temperature of 4th and 5th chamber is more than 350 C
Cooling: Fourteen minutes is the cooling time for biscuits. Natural cooling is used in the
cooling section.
Packaging: A multipack auto feeder machine is installed in the packaging section. This
machine can pack on an average 44 packets per minute. Different size, shape and colour
packets are used according to different types of products. After the packaging the products
stored into boxes goes for store house and despatch.

11. Storage: After the packaging the products come into the storage room. Anmol follows a
FIFO (First In First Out) method for their storage system.
Despatch: This is the end of the entire manufacturing process. From the storage products
goes for its delivery to different locations by trucks. 50 trucks delivery is done each day on
an average. Company has some own trucks others are hired from the transport companies.

16. Key Learning from the Visit:
This Industrial Visit enables us an exposure to better industrial and business practices. We
have visited the entire process department. In each and every department we got new ideas
and new thinking which is very necessary for our personal development. After all, ‘See &
Know’ is a better motto than ‘read and learn’.
The key learning from the Industrial visit are listed below.
The Anmol Industry uses different technologies in their production process which help us
to understand the role of advanced technology in productivity of manufacturing good.
The factory strictly follows quality and safety aspects like they uses metal detectors
everywhere in their productionline to avoid foreign particles.
There is proper management system which ensures the utilization of manpower and
machines.
All the loading and unloading activities are done by machines and labourers which is a
good experience on time management and capital intensive techniques in production
system.
Learning from a production executive is, becauseof high demand of digestive and butter
biscuits the plant uses 5 of its 8 departments to producethese biscuits.
Anmol also have their contingency plans for seasonal demands in terms of their
production capacity and storage.
17. Feedback:
It has been a very good experience while visiting Anmol Industry as it has help me to
encounter with practical knowledge regarding manufacturing process. However, if more
time has been allotted I could have gather information on different spheres of the industry
like more on their quality control process, their cake manufacturing departments and their
working environment.
